Tasting Notes: green grapes and warm molasses undertones

A few years ago, our friends at French Broad Chocolates asked if we wanted to get in on a shipment of Peruvian beans that they thought we’d like. We made a sample batch with them and loved it, and ended up splitting the shipment with them. In 2016, we released this, our first Peruvian bar. The beans came from the Norandino cooperative in the northeastern city of Piura. Norandino bought this cocoa from associations in the surrounding region as well as in the nearby Amazonas, San Martin and Tumbes - close to the Ecuadorian border. These groups took particular care to distinguish the individual processing needs of certain genetic strains, and focus especially on native Peruvian cacao. The beans used in our bar are primarily the Piura Blanco, named for the high percentage of white beans found in each pod.
